1 angle food cake (Make it or buy it; it's easier to buy it; they're delicious.)
1 pint strawberries, crushed
Splenda or Equal
1 tablespoon milk
1 pint strawberries, sliced
1 tub cool whip Lite®
strawberry fans, fresh mint leaves, optional
1. Cut cake horizontally into 3 layers. Place 1 cake layer on serving plate.
2. Sprinkle Equal over crushed strawberries until desired sweetness is achieved. Stir crushed strawberries and milk into 1 1/2 cups of cool whip in large bowl. Spread half of strawberry mixture on cake layer. Arrange 1/2 sliced strawberries on top of strawberry mixture.
3. Repeat layers, ending with cake. Frost top and sides of cake with cool whip. Refrigerate one hour or until ready to serve.
4. Decorate top and sides with strawberry fans.
