This is the first of several posts that I'll be making today. Patsy, Bec and Jacob came over last night for our usual Thursday night get together. Patsy and Jacob arrived first and Herman just a few minutes later and then Bec. We were all starving. Patsy, Bec and I sat on the deck waiting for the corn to boil and talking, while Herman and Jacob played in the back yard. It was a nice evening, a little overcast but warm. Then we had dinner, details to follow, and after dinner Herman took Jacob up for his ritual bath and Patsy, Bec and I sat on the deck again and talked and talked, trying to solve all the world's problems. Then we sang a song together, Running Bear. What a beautiful bonding experience it was, three close friends with a song on their lips.
Also, I would be remiss if I did not acknowledge the spectacular dinner I had last night. It was Patsy and Bec's turn to cook. Patsy made her chicken barbecue. We served it on rolls, just like a barbecue sandwich, and she made cole slaw to go with it. She also made twice baked potatoes.
Bec arrived with corn on the cob that she had bought at Ukrop's. We had corn on the cob a few weeks ago, and I'm a bit confused. Corn on the cob is only sweet when it's freshly picked. The sugar content begins to change the moment it's plucked from the corn stalk, hence, you should cook it the same day it's picked. In fact, I've heard it said that the best way to cook corn is to take the pot of boiling water out to the field, and drop the ears in as you pick them. Though a joke, the point is well taken, and that's why I don't understand how the corn can be so good this time of year in Virginia. Obviously the corn was not grown here. It had to be shipped from somewhere, and it could not have been picked the same day we ate it, however, it's as sweet as our own home grown, freshly picked, July corn that we'll have access to this summer. It was great.
Now, to the best part of the meal. Well, the corn is a close runner. Patsy made her angle food cake with the strawberry and whip cream filling, and she frosted the outside with cool whip also. I love this cake. I can't believe it's so simple to make, and it's only three points on the Weight Watchers program. No kidding, and you get a generous portion. I'll guarantee you that my piece was generous. Oh, yea! I posted the recipe for Strawberry Heaven Cake above. You must try it. You don't even have to make the cake yourself. It's easier to just buy the angle food cake, and Patsy has done it both ways. I think both are equally as good. You must try this if you're dieting, and even if you're not. Truly!
Ok, that's what I had for dinner last night. Wish y'all could have been here. Now you know why this blog is called 'Food For Thought.' We are all about food. Yes, we are.
